For the last decade i’ve been using some version of the Calphalon two pack nonstick pans and found them useful but finally decided that i needed to step up my game and try some real pans to get a real sear on food.
After extensive googling of various comparison shopping sites i found the Tramontina Steel Fry Pan that hit the trifecta of not being too expensive, well reviewed, and not made in China. I’ve been using it for about six months now, and have done assortment of stir fries, pan sears, and even some eggs. My first fear was clean up since the non stick ones were generally easy to clean, but nightmares of burnt cemented on crud from my youth were my biggest fears of going with a steel pan. Once i learned to clean up as soon as i was done, and not let anything sit too long drying made my life using it better. As a plus it is technically dishwasher safe, but i do my best not to use that option.

Overall i’m really happy with the pan. The pan feels solid, and a good weight, and the handle is comfortable to hold and flip without the need of a towel. The pan heats up quickly, and holds it for a good amount of time. Its recommended not to use high heat, and i haven’t felt the need to go up on my burners, and it can handle going into the broiler for making nasu miso.
